Applesauce Cake
1 1/2 C. Applesauce (chunky is especially good)
1 C. Sugar
1/2 C. Shortening
1 C. Raisins
2 C. Flour
1 tsp. Baking Soda
1 tsp. Nutmeg
1 tsp. Cinnamon
1 C. chopped Nuts.
METHOD
- Combine applesauce, sugar, raisins and shortening in a saucepan.
Cook over low heat, stirring frequently until the mixture comes to a
boil. Allow to cool.
- Combine dry ingredients and nuts.
- Stir everything together until well blended. (Mixture will be very
thick.)
- Pour into a greased and floured 9" x 12" pan.
- Bake at 350 for 30 minutes, or until a pick inserted in the cake
comes out clean.
- Allow to cool completely, then cover with plastic wrap.
